Easter Rocky Road Recipe
Ingredients
1½ cups walnut pieces
2 cups pastel mini marshmallows
24 oz white chocolate chips
10 Biscoff cookies, broken into small pieces
Instructions
1. Prepare the pan: Line a 9 x 13-inch baking dish with parchment paper, leaving a little overhang so the candy is easy to lift out when finished.
2. Prepare the Toppings: Set aside ¼ cup each of walnuts and marshmallows. Give both a rough chop to make smaller pieces.
3. Melt the white chocolate: Place the white chocolate chips in a microwave-safe bowl. I use a large glass bowl so there’s lots of surface area for easy chocolate melting. In addition, the bowl can then be used as your mixing bowl.
Microwave chocolate in 30-second intervals, stirring after each heating (I use a fork) until chocolate is fully melted and smooth. Be careful not to overheat.
4. Combine the mix-ins: Add the broken Biscoff cookies, walnut pieces, and pastel mini marshmallows to the melted chocolate. Gently stir with a wooden spoon or spatula until everything is evenly coated.
5. Spread in the pan: Transfer the mixture to the prepared baking dish. Use a rubber spatula to spread it evenly into a thick layer. It doesn’t have to be perfectly flat, but shoot for even thickness.
6. Decorate: Sprinkle the nuts and marshmallows that were set aside on top of the Rocky Road.
7. Chill until firm: Refrigerate for about 1 to 2 hours, or until the chocolate is completely set.
8. Cut and serve: Lift the Rocky Road out of your baking dish using the parchment paper. Use a sharp knife to cut into squares, bars, or irregular pieces and enjoy.
