Traditional Rocky Road candy originated in the United States during the Great Depression, when confectioners added nuts and marshmallows to milk chocolate to create a delicious candy that was both indulgent and economical. 

My Easter Rocky Road recipe combines creamy white chocolate, crunchy cookies, walnuts, and pastel marshmallows to create a sweet, crunchy treat that’s ideal for Easter baskets and dessert platters, and as edible gifts. 

The best thing about this Easter Candy recipe: It’s so easy! I’m a chef, not a candy maker, and I can assure you that there is no need for a candy thermometer, rolling pin, or double boiler to make this delightful treat.

I’m all about easy. It takes just four simple ingredients to make this homemade Easter Rocky Road recipe—and all of them are readily available at your grocery store. 

This recipe is also very flexible. You can easily swap ingredients depending on your preferences and what’s in your pantry.

White Chocolate Chips

White chocolate forms the creamy base that holds everything together and gives these Easter treats a light, bright color for spring. Use a high-quality chocolate that you like and trust. 

Approved Substitutions:

  • Chopped white chocolate baking bars or melts

  • Milk chocolate or dark chocolate for a more traditional Rocky Road flavor

  • Dairy-free white chocolate chips for a vegan version

Pastel Mini Marshmallows

These give the candy its festive Easter colors and classic Rocky Road texture. You can use different shapes of the pastels, like flowers, for even more of a spring-themed spin.

Biscoff Cookies

Approved Substitutions:

  • Graham crackers

  • Shortbread cookies

  • Vanilla wafers

  • Digestive biscuits

Walnuts

Walnuts provide another layer of crunch and a nutty contrast to the sweet ingredients. 

Approved Substitutions:

  • Other nuts such as pecans, almonds, macadamia nuts, or pistachios (great for extra Easter color)

  • Dried fruits like cherries, mango, or cranberries

  • Omit entirely for a nut-free version

Easter Rocky Road Recipe

Ingredients

1½ cups walnut pieces
2 cups pastel mini marshmallows
24 oz white chocolate chips

10 Biscoff cookies, broken into small pieces


Instructions

1. Prepare the pan: Line a 9 x 13-inch baking dish with parchment paper, leaving a little overhang so the candy is easy to lift out when finished.

2. Prepare the Toppings: Set aside ¼ cup each of walnuts and marshmallows. Give both a rough chop to make smaller pieces.

3. Melt the white chocolate: Place the white chocolate chips in a microwave-safe bowl. I use a large glass bowl so there’s lots of surface area for easy chocolate melting. In addition, the bowl can then be used as your mixing bowl.

Microwave chocolate in 30-second intervals, stirring after each heating (I use a fork) until chocolate is fully melted and smooth. Be careful not to overheat.

4. Combine the mix-ins: Add the broken Biscoff cookies, walnut pieces, and pastel mini marshmallows to the melted chocolate. Gently stir with a wooden spoon or spatula until everything is evenly coated.

5. Spread in the pan: Transfer the mixture to the prepared baking dish. Use a rubber spatula to spread it evenly into a thick layer. It doesn’t have to be perfectly flat, but shoot for even thickness.

6. Decorate: Sprinkle the nuts and marshmallows that were set aside on top of the Rocky Road.

7. Chill until firm: Refrigerate for about 1 to 2 hours, or until the chocolate is completely set.

8. Cut and serve: Lift the Rocky Road out of your baking dish using the parchment paper. Use a sharp knife to cut into squares, bars, or irregular pieces and enjoy.
