I am addicted to everything about this homemade White Chocolate Almond Bark recipe. From making it, to eating it, to sharing it—I just can’t get enough!

First, making it is so easy, you’ll want to make it for potlucks, Thanksgiving, Christmas candy exchanges, and any occasion where a sweet treat is welcomed (just about any occasion, in other words).

Second, not only is this one of the easiest candy recipes to make at home, it’s so delicious. The combination of creamy white chocolate, crunchy toasted almonds, and tart cranberries is elevated with just a hint of sea salt. 

Third, I’m not the only one who loves this white chocolate bark. It makes a great gift or party favor any time of year. Everyone who I’ve ever shared it with raves about it!

White Chocolate Almond Bark Ingredients and Substitutions

Some chocolate bark recipes add butter, coconut oil, or cocoa butter, but there’s really no need for any of that. This easy recipe has just four simple ingredients!

Ingredients for White Chocolate Almond Bark

White Chocolate

I like to use high-quality white chocolate melting wafers like Guittard, Valrhona, Ghirardelli, or Callebaut.

You can also use white chocolate chips, but I find the round discs melt more evenly than the chips. Chips and melting wafers can be found in the baking aisle of your grocery store.

If you prefer dark chocolate or milk chocolate, feel free to substitute.

Almonds

To keep this white almond bark recipe simple and quick, purchase roasted whole almonds. If you buy raw almonds, toast them first on a baking sheet pan for about 10 minutes.

I like to chop the almonds myself. They taste better and I like having different shapes and sizes in my bark.

Dried Cranberries

I love how the tartness of dried cranberries balances the sweetness of the white chocolate. If you can, purchase unsweetened dried cranberries.

Sea Salt

This little pinch of sea salt is really optional. But for me, it makes all the difference, so I include it in the recipe.

If you don’t have salt flakes, you can substitute regular sea salt or Kosher salt. 

White Chocolate Almond Bark Recipe

Ingredients


1 cup whole roasted almonds, chopped
½ cup dried cranberries

10 oz. white chocolate melting wafers
¼ teaspoon sea salt flakes

Instructions

1. Put aside ¼ cup of almonds and 1 tablespoon of cranberries for the top of your bark.

2. Prepare a baking sheet pan with parchment paper.

3. Place the melting wafers into a large microwave-safe mixing bowl. I use a large bowl so the wafers aren’t all stacked up on one another; this way they melt more quickly and evenly.

4. Microwave wafers for 30 seconds, stir, then microwave for another 30 seconds and stir. Even if it seems like the chocolate is not melting, do not increase the time here.

5. Now, microwave at 20-second intervals until white chocolate is completely melted and smooth. Do not overcook.

Note: White chocolate burns easily, so if you don’t have a microwave, use a double boiler (not a saucepan) to melt your wafers on the stove top.

6. Quickly stir in the almonds and dried cranberries until well combined.

7. Pour the white almond bark mixture onto the sheet pan. Using a silicon spatula, smooth out the bark into a layer about ⅓-inch thick.

8. Top your White Chocolate Almond Bark with the set-aside almonds and dried cranberries. Gently press them into the bark.

9. Let the bark cool and set for 1 to 2 hours in the refrigerator or 2 to 4 hours at room temperature.

10. After the white chocolate bark is set, you can cut it or break it into pieces and serve.
