Nuts for Nutty Coleslaw

This Nutty Coleslaw recipe is a mayo-free coleslaw with a light nutty flavor.
While this Nutty Coleslaw is the perfect side to the best of American cuisine like barbecue and Pulled Pork Sandwiches, its peanut flavor also compliments Asian dishes like Bahn Mi Sandwiches, Chicken Lettuce Cups, and Wasabi Crusted Salmon!
Nutty Coleslaw Recipe
1/4 cup peanut sauce
2 tablespoons rice vinegar
2 cups green cabbage, shredded
1/2 cup carrot, shredded
1/2 cup jicama, cut into matchsticks
3 tablespoons peanuts, chopped
2 tablespoons scallion, chopped
1. Mix the peanut sauce and rice vinegar in a bowl.
2. Add green cabbage, carrots, jicama, peanuts, and scallions and toss together.
1. The slaw will last fully prepared for 5 days in the refrigerator.
