If you need a quick, crowd-pleasing appetizer that disappears fast, this Refried Bean Dip is it. 

Creamy, cheesy, and packed with bold flavor, it’s perfect for Cinco de Mayo, game day, taco night, casual gatherings, or anytime you’re craving Mexican food

It’s often the easiest appetizer on my Mexican party table, and it gets the most compliments. Don’t you love dishes that taste like you put a lot of time in, but are really effortless?

All of these simple ingredients are readily available at your grocery store.

Refried Beans

Because I have a reputation as a healthy chef, I typically use fat-free refried pinto beans. But traditional refried beans (made with lard) will give you a slightly richer flavor. You can also swap in refried black beans for a slightly earthier taste. 

Of course, you can make your own refried beans from scratch if you have the time. But it’s a lot easier to open a can. You don’t have to tell anyone!

Sour Cream

I like the creaminess and tang of sour cream, but you can also use whipped cream cheese. If you’re watching your fat intake, low-fat sour cream is a good choice. Greek yogurt is a great substitute if you want more protein.

Taco Seasoning

Since this is an easy bean dip recipe, a store-bought packet of taco seasoning is the most convenient option. I usually purchase a mild, low-sodium packet, but if you prefer spicy, go for it.

In addition, homemade blends (chili powder, ground cumin, onion powder, and garlic powder, for instance) work nicely if you want to control the salt and spice level even more.

Green Salsa

Salsa verde (green salsa), adds a little acidity to balance the richness of the beans and cheese. On this I also go mild, but use whatever heat you like.

If you prefer, you can use red salsa or even a chunky pico de gallo for added texture.

Cheese

This is a cheesy dip, so the type and quality of cheese matters. The Mexican blend I use contains cheddar, Monterey Jack, asadero, and queso. I use finely shredded cheese for its meltability. 

Other great choices are Colby Jack, or even pepper jack (for heat). 

Cilantro & Green Onions

Fresh cilantro and green onions add a pop of color and freshness right before serving. They are my favorite toppings, but you can use diced green chiles, tomatoes, or pickled jalapeños.

Refried Bean Dip Recipe

Ingredients

1 16-ounce can refried beans
1 cup sour cream
1 (1-ounce) package taco seasoning
½ cup green salsa
1½ cups finely shredded Mexican blend cheese
1 teaspoon fresh cilantro leaves, roughly chopped
1 teaspoon green onions, chopped

For serving: Tortilla chips

Instructions

1. Preheat oven: Set temperature to 350°F (175°C).

2. Mix the base: In a large bowl, combine the refried beans, sour cream, taco seasoning, and green salsa. Stir until smooth and well blended. Use a silicon spatula to scrape the bottom of the bowl when stirring.

3. Assemble the dip: With a silicon spatula, spread the bean mixture evenly into a 9-inch pie plate, 8” x 8” baking dish, or oven-safe skillet.

4. Add cheese: Sprinkle the shredded cheese evenly over the top.

5. Bake: Place dip in the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.

6. Finish: Remove dip from the oven and sprinkle with chopped cilantro and green onions. Serve warm with tortilla chips.

How to Serve Refried Bean Dip

This dip is best served warm, straight from the oven, when the cheese is perfectly melty. I like to place it in the center of a platter surrounded by tortilla chips for easy dipping.

Garnish

You can dress up your dip with a drizzle of sour cream or extra toppings like sliced jalapeños, diced tomatoes, and/or black olives.

Serve With . . .

This is the best bean dip for an appetizer, but I also include it as a side dish with dinner alongside mulitas, tacos, enchiladas, quesadillas, or Mexican pizza.

For a party spread, serve your dip alongside guacamole, mango salsa, taquitos, and fresh veggies for dipping.

Hosting tip

Keep Mexican refried bean dip warm in a small slow cooker on the “warm” setting if you’re serving it over a longer period.

Variations

Spice It Up

If your crowd likes to spice it up, use hot salsa, spicy taco mix, add some diced jalapeños on top, and/or top with a drizzle of hot sauce.

Meat Lovers

This is a naturally vegetarian dip, but feel free to add cooked ground beef, chorizo, or sausage.

Can I make refried bean dip ahead of time?

Mostly yes! You can assemble the dip (without baking), cover it tightly with plastic wrap, and leave it at room temperature for up to 4 hours (as long as it’s not a particularly warm day). 

Or, you can refrigerate your dip for up to 24 hours. When ready to serve, bake as directed—just add a few extra minutes if the dip is coming straight from the fridge.

How do I store leftovers?

Store any leftover dip in an airtight container in the refrigerator as long as 3–4 days.

How do I reheat refried bean dip?

Reheat in the oven at 350°F until warmed through, or microwave in short intervals, stirring occasionally for even heating.

Can I freeze refried bean dip?


You can freeze it, but keep in mind that the texture may change slightly due to the sour cream. I’ll freeze the leftovers and use them later in bean burritos or quesadillas. For best results, thaw frozen dip overnight in the refrigerator before reheating.

Can I make this dip healthier?


Absolutely. Use fat-free or low-fat refried beans, low-fat sour cream, and low-fat cheese. You can also reduce the amount of cheese if you’re really motivated.

What can I use instead of tortilla chips?
